It is also easy to work with and is clay-like to handle. Gum paste is similar to fondant icing but is not edible. It does, however, last for years.

Being able to prepare or buy the cake decorations in advance is a huge time saver closer to the wedding when there are many other things to be doing. You can even make the cake itself and freeze it for a couple of weeks, so all you need to do the day before the wedding is ice it and decorate it.
